Smoked Catfish
Laba smoked fish is produced from live catfish and other fishes. During processing, the live fishes are killed and completely degutted (that is, all intestines and unwanted parts of the fish are removed), garnished with ginger, pepper and salt and hot-smoked. The smoking process removes most disease-causing microorganisms from the fish, and gives the fish a pleasant and distinct taste. The fatty content in the fish is also greatly reduced during the hot-smoking process.
Laba smoked fish are packed as whole fish, sliced or in chunk.
